Happy World Nutella Day. Nutella and I have a love/hate relationship. I literally CANNOT have it in my house or it will be eaten everyday. I bet my son loves Nutella based on how much I consumed in pregnancy (too soon to know). I’m ready to share this amazing recipe by Maria at Two Peas & Their Pod. Her blog has a million cookie recipes by the way – seriously. These cookie bars are the bees knees. Oooey gooey and melty and delicious.
Chocolate Nutella Cookie Bars with Sea Salt
2 sticks of unsalted butter at room temperature
1 cup of sugar
1 cup of light brown sugar
1 1/2 tsp vanilla extract
2 1/2 cups of all purpose flour
1 tsp baking soda
1/2 tsp sea salt + more for sprinkling
3/4 cup pressed cocoa powder (i used toll house)
8 oz package of semi-sweet baking chocolate crushed in small pieces
container of Nutella (you will probably use the whole thing)
Preheat the oven to 350 degrees. Mix butter and sugars until well blended. Mix in eggs and vanilla extract. In a separate bowl, sift together flour, baking soda, sea salt, and cocoa powder. Gradually add the flour mixture to the butter mixture until totally combined. It will be SUPER thick and sticky so don’t be alarmed. Finally, add chocolate pieces and stir to incorporate. Grease a 9×13 inch pan. Divide the chocolate mixture in half and press it into the bottom of the pan to form a layer. Spread a layer of nutella evenly over the top of the layer. Take the other half and cover the nutella as much as possible. Add another layer of nutella and sprinkle a bit of sea salt over it. Bake for 30 minutes or until “firmed up”.
